Granola Cookies

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla

3/4 cup flour
1/2 tsp. salt
1/2 tsp. baking soda

1 cup homemade granola

Cream butter, sugars, egg, and vanilla together. Sift together flour, salt, and baking soda. Add the dry ingredients to the creamed mixture, mix well. Add the granola.

Drop by rounded teaspoonsful onto greased cookie sheet. Bake at 375˚ for 8 to 10 minutes. Cool on paper towels. Freeze in a sealed plastic bag so that you won't eat them all at once.

Note: These proportions make a thin, almost lacey cookie. If you want a more substantial one, add a bit more flour.

Makes about 2 dozen.
