1 ½ tbl. oil
¼ cup tomato juice
1 tbl. lemon juice
1 small onion, minced
1/8 tsp. chile powder
½ tsp. dry mustard
¼ tsp. ground fennel
¼ tsp. pepper
1 clove garlic, peeled and minced
½ tbl. coriander
1 tsp. turmeric
1 tsp. ground cumin
4 tbl. white vinegar
½ cup sliced mangoes, optional
¼ cup pineapple chunks and juice
½ banana sliced
1 tbl. honey
½ tsp. salt
2 cups cubed cooked chicken
Have all ingredients measured and ready. Heat wok, add oil, tomato and lemon juices and other ingredients except chicken. Mix, lower heat, cover and simmer 15 minutes. Ladle out one cupful, set aside. Add chicken to sauce in pan, stir and heat through. Serve with rice and pass extra sauce.
