Sour Cream Coffee Cake

1 ½ cups flour
1 cup sugar
2 tsp. baking powder
½ tsp. soda
¼ tsp. salt
1 cup sour cream (we’ve always used yogurt instead)
2 eggs

Sift dry ingredients. Combine sour cream and eggs, beat well. Stir in dry ingredients. Beat until smooth. Spread in a lightly greased 9” x 9” pan. Sprinkle with streusel mixture, below. Bake at 375 for 40 minutes until top is firm and browned.

Streusel mixture:
2 tbl. flour
2 tbl. butter
5 tbl. brown sugar

Add cinnamon, or nuts, or coconut, if desired.
