Gingerbread Waffles with Warm Applesauce

  • These always made the loveliest weekend breakfast for the family; the kitchen was so fragrant with the smell of spices and apples.

1/4 cup melted butter
  • 1/2 cup firmly packed dark brown sugar
  • 1/2 cup light molasses
  • 2 large eggs, separated
  • 1 cup milk


2 cups all-purpose flour

1-1/2 tsp. baking powder

1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/2 teaspoon salt

  • Cream together the butter and brown sugar. Beat in the molasses, egg yolks, and milk. 

Beat the egg whites in a separate bowl until soft peaks form.

Sift dry ingredients together into the creamed mixture, then fold in beaten egg whites.

Bake in a preheated waffle iron until golden. Serve with butter and warm applesauce.
