Peanut Butter Cookies

What lucky kids we were! Cholesterol hadn't been invented when I was a child, and no one had ever heard of peanut allergies.

1 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
1 cup peanut butter
2 1/2 cups sifted all-purpose flour
2 tsp. baking soda
1/2 tsp. salt

Cream together shortening, sugars, eggs, and vanilla. Stir in peanut butter. Sift dry ingredients and stir them into the peanut butter mixture.

Drop by rounded teaspoonsful onto ungreased cookie sheets. Press with back of floured fork to make a crisscross design on each cookie.

Bake at 350 for about 10 minutes. Makes 3-5 dozen cookies, depending on how big you make them.
